Artichoke and Olive Tuna Salad

I wanted to share this simple recipe with everyone, it's quick, healthy and delicious!

INGREDIENTS
12 ounces Tuna, drained and flaked
1 cup Artichoke Hearts, chopped
1 cup Green Olives
1/3 cup reduced fat mayonnaise
2 teaspoons Lemon Juice
1.5 teaspoons Oregano, chopped. Use fresh oregano it makes all the difference in the flavor and freshness
4 each Boston Lettuce, rinsed and dried
2 each Tomatoes, sliced into 8 slices

METHOD
Combine all the ingredients except the lettuce and tomatoes. Mix well.
Place two lettuce leaves on each of the two plates. On one side of the
lettuce place to slices of tomatoes. Using an ice cream scoop, place two
rounds of the tuna mixture on top of the lettuce leaves.
 

To make it even healthier, substitute non-fat Greek yogurt for the mayonnaise.  Yum-O!

Makes several nice size lunches and the salad last for a couple of days. This recipe is good for two people for dinner or 4 for a small salad before an entree. Double the recipe if you want to make this a complete dinner for 4.

Library Updates

As the summer continues and the heat rises, we have been very busy in the resource library. We are currently working to enhance our online catalog records to make it easier for our patrons to find the materials that they and their communities need. By cross-referencing all of our materials into the various subjects that they may fall into, we hope that the online experience will be more rewarding and productive. We are always making changes and improvements to our materials and the library space in general, so come on in and see all the new changes, including a comfortable reclining chair

Here are some of the most recent additions to our library collection.

Games are a great way to get a group move involved in a particular topic. Thanks to the feedback and success stories of our library patrons we have added more games to our Bingo line up.

Responding to Harassment of LGBT Youth

The news over the past few months has been flooded with stories of teenagers committing suicide because of the harassement, bullying and fear they experienced for either being gay or lesbian or perceived to be gay or lesbian.  It's up to everyone out there, to make a difference.  At home, in your place of work, at your kids schools and out in the community in which you live and work. 

As a teen I was beaten and bullied more times than I can even remember many times with weapons other than a person's fist.  So while the hate toward the LGBT community is very personal for me, it is not only the LGBT students who are bullied, beaten and scared.  Anyone who is perceived to be "different" is at risk. 

With the increase in bullying in our schools and communities, I have begun to build our library collection in the area of bullying and violence with an emphasis on youth and espeically LGBT youth.  Below is a list of some of the new materials that have recently arrived.

 

Being gay: Coming out in the 21 century -- Battle Creek, MI: Cambridge Educational, 2003. (DVD)

Abstract: This program presents the accounts and stories of people who have recently taken the step of coming out. Interviewees and experts discuss the benefits of this important transition by examining the six stages of coming to terms with one's sexual identity. The film also looks at the dangers of running away from self-acceptance in regards to alcoholism, drug abuse and suicide.

 
 
Coming out : Voices of gay and lesbian teens and their families / Karin Heller ; Bill Domonkos. -- San Francisco, Calif. Psychotherapy.net, 2008. (DVD)

Abstract: "For gay and lesbian teens, coming out can be a complicated and difficult process. They may be isolated, alienated from their family and peers, and feel the dangerous threat of homophobia in their community. Out in the silence : Love, hate and a quest for change in small town America / Film by Joe Wilson ; Dean Hamer. -- Washington, D.C. Garden Thieves Pictures, 2010. (DVD)

Abstract: Filmmaker Joe Wilson returns to his hometown of Oil City, Pa., after his wedding announcement appears in his small hometown newspaper causes controversy, and he receives a plea for help from the mother of a gay teen who is being tormented in school. Challenges viewers to rethink their values and close the gaps that divide communities on this controversial issue.

 
Responding to Harassment of LGBT Youth in Schools / Advocates for Youth. -- Washington, D.C. Advocates for Youth, 2010. (Book)

Abstract: This report explores three countries’ responses to one aspect of LGBT marginalization—school harassment of LGBT youth. In particular, the authors studied the policies and programs of the United States, Germany and Brazil in an effort to identify lessons learned that could help ameliorate school harassment of LGBT youth and create the beginnings of a 3Rs movement to end homophobia and transphobia and the negative impact they have on young people. These countries were selected as snapshots of important, trend-setting work being done in different regions of the world.

 
Suicide Risk and Prevention for LGBT Youth / SPRC. -- Newton, MA: Suicide Prevention Resource Center, 2010. (Book)

Abstract: "This paper highlights the higher risk of suicidal behavior among lesbian, gay, and bisexual (LGB) youth. This higher risk may well extend to transgender (T) youth. Additionally, the paper provides recommendations to reduce this risk by addressing stigma and prejudice at the institutional and individual level; by forming partnerships across youth-serving, suicide prevention, and LGBT youth agencies; by building on recent advances in research; and by responding to the issues of LGBT youth."--Executive Summary

Brochure Give-a-way

We have recently come across a lot of very useful brochures on the subjects of Growing Up and Puberty, Self-Esteem, and Easting Disorders.  We have both English and Spanish versions of these brochures.  The brochures were produced by the Harvard Pilgrim Healthcare Foundation back in the late 1990's and early 2000's. 

Because we have these brochures in such large quantities, we are hoping that other organizations in our area may be able to benefit from having a quantity of them for their clients, customers and communities.  Below are the cover images of the brochures.  If you are interested in obtaining any of these brochures in quantities of 25, 50, or even 100, please feel free to contact Bill Holden at bholden@healthier-communities.org.

Training Needs Assessment
